As the name itself explains so the most prominent ingredient will be milk itself. Milk-cake is a dessert consumed all over India. It is easily available in sweet shops but it's really easy to make it at home, and it can be made with your standard everyday ingredients that are bound to be in most kitchens. It involves the simple step of adding cultures to the milk and then cooking it. It is a bit time consuming but worth it.
The key ingredients you require are patience and commitment and rest everything you can get from the market or online.
Doodh/Milk - 4 liters
Dahi/Curd - 3-4 tbsp
Shaakar/Sugar - as per taste
Elaichi powder/Cardamom powder - 3-4 pods/half a tablespoon
Ghee - 5 tbsp (you can add more or less as per you desire)
Lemon juice/ Nimbu ka ras - 1 teaspoon
Cashews, Almonds, and Pistachios - 5 each (blanched and chopped) (*optional)
Saffron ( *optional)
Take a non-stick pan and add milk and saffron and keep the stove on medium heat.
Use a silicon heat resistant spatula to clean the sides of the pan as the milk starts to boil and sticks to the size of the pan.
Once you see the first boil add dahi/curd (make sure to whisk the curd before adding it to the boiling milk).
Then add the lemon juice and let it simmer for a while.
Keep stirring the milk slowly till you see the Chaana getting separated from the milk and the leftover water contains whey protein.
Now gradually increase the heat and keep stirring the mixture till the water evaporates and you are only left with channa.
Add ghee and roast the channa in ghee till you see a golden brown color and then slowly lower the flame.
Add sugar as and mix well (* In any dessert sugar is added in the last as it slows and stops the cooking process.
Add cardamom powder and chopped nuts that are blanched in water.
Take a square or round container grease it with ghee or use a baking paper then pour the mixture inside the container.
Let the mixture sit at room temperature for a while and then refrigerate it for a couple of hours.
Take it out slice and have it with tea.
